Wuyi Ensemble, known as Da Hong Pao or Wuyi rock tea, is a roasted oolong tea from the Wuyi mountains in Fujian province, China. The high fire treatment gives Wuyi oolong its specific smoky and minerally character.
Taste:
Smooth and rich, with a perfect balance of sweetness and slight bitterness. The tea has a long-lasting "rock charm" (岩韵), reflecting its mineral-rich terroir.
This is a beautifully balanced and complex tea with a deep, yet faint, ripe fruitiness in the background. The flavor is slightly honey-floral and nutty, with hints of white sesame, cinnamon, and sweetened burdock root. There is a lingering sweet caramel aftertaste due to the high fire roasting technique. Wuyi Ensemble oolong is warming and satisfying. Being a good digestive tea it goes well with food or sweets. It is perfect for multiple infusions so you can tease out many layers of intriguing flavor.
Brewing Instructions for Wuyi Dahongpao
1.Tea-to-Water Ratio:
Fill the teapot or brewing vessel to about half-full with tea leaves.
2.Prepare the Utensils:
Rinse the teapot and teacups with boiling water (100°C/212°F) to warm them.
Place the tea leaves into the teapot.
3.Rinse the Leaves:
Pour boiling water (100°C/212°F) into the teapot, covering the tea leaves.
Quickly discard the water to rinse the leaves and awaken their aroma.
First Brew:
Pour boiling water (100°C/212°F) into the teapot from a height to enhance oxygenation.
Steep for 5 seconds before pouring into the teacups to enjoy.
Second Brew:
Add boiling water again, steep for 8 seconds, and enjoy.
Third Brew:
Add boiling water and steep for 15 seconds before drinking.
Tips:
Adjust steeping times for subsequent brews to suit your taste, as Dahongpao is known for its ability to produce multiple flavorful infusions.
